However, rice holds a special place in Borneo. Kadazandusun people, the largest indigenous group of Sabah, believe that rice has soul because the presence of paddy spirits, <em>Bambarayon<\/em>. <strong><em>Linopot <\/em>(or <em>Hinopot<\/em>) is rice being packed and wrapped nicely in a big leaf<\/strong>, a traditional takeaway of Sabah natives. Rice packed in Linopot can last for days without going rancid. In the old days, before the highway to the interior was built, natives from Tambunan would walk for two to three days along rugged mountain trails (a.k.a. During their long trek, they would carry a few linopot in their backpacks, eating them on the go like bread. They often mix the rice with yams, pumpkin, cassava, or sweet potato just to use less rice, since it&#8217;s not always available.<\/figcaption><\/figure>\n\n\n\n<p>Nowadays paddy sold in supermarket is mainly processed white paddy. Though processed white race has longer shelf life and more pleasing to the eyes, its best nutrients are gone due to the removal of bran and germ, which contain fiber, protein, antioxidants, vitamins and minerals. That&#8217;s why health-conscious consumers opt for brown rice, which retains these nutrients. The coloured hill rice of Linopot shares the similar health benefits. You could add <em>pandan <\/em>leaf for extra fragrant. Once the rice is cooked, it will be pounded and stirred by a wooden pestle so the starchy ingredients are mashed to mix evenly with the rice.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Wrapping Leaves of Linopot<\/h2>\n\n\n\n<p>When the rice is prepared, next step is to pack it into Linopot with the fresh leaf of doringin, kobu, tintap, longkobung, toropoi, wonihan, or banana because their leaves are big and readily available. The leaf also absorbs the excessive moisture in the rice so the food can last longer. The leaves are washed and dried before use. Right: Linopot wrapped in three different types of leaves.<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Making a Linopot<\/h2>\n\n\n\n<p>The wrapping is carried out while the rice is still hot, as the heated leaves become softer and easier to fold. First, the rice is pounded inside the pot until it is tightly compacted. It is then poured onto the underside of the leaf, since the upper side might be dirty from dust or bird droppings. Next, using the leaf as a barrier, the rice is pressed firmly from all sides with both hands until it is compressed and holds together like a brick.
