{"id":13,"date":"2015-05-09T12:04:53","date_gmt":"2015-05-09T04:04:53","guid":{"rendered":"http:\/\/www.mysabah.com\/wordpress\/?p=13"},"modified":"2015-05-09T12:20:14","modified_gmt":"2015-05-09T04:20:14","slug":"koling-koling-bajau-food","status":"publish","type":"post","link":"https:\/\/www.mysabah.com\/wordpress\/koling-koling-bajau-food\/","title":{"rendered":"Koling-Koling, traditional Bajau food of Sabah"},"content":{"rendered":"<p>Great food makes our tongues happy. <em>Koling-Koling<\/em> does that and it also WOWed me when I first saw it in a food exhibition of <a href=\"http:\/\/www.mysabah.com\/wordpress\/?p=5444\">Sabah Fest 2015<\/a> last week. <strong><em>Koling-Koling<\/em> (or <em>Bangi-Bangi<\/em>) is a traditional food of Bajau people from Semporna town.<\/strong> At first impression, Koling-Koling may not look so appetizing because it looks like worm, but it&#8217;s the interesting shape that piqued my curiosity.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_1.jpg\" alt=\"Koling-Koling (or Bangi-Bangi)\" \/><br \/>\nPic: Koling-Koling, even the name sounds amusing<\/p>\n<p>I was so eager to see how this curly slim bread was made. Aunty Badriah Makling, a friendly Bajau elder from Semporna was happy to demonstrate the art of making Koling-Koling (Thank You!). Below is a short video of the process if you prefer video over photos.<\/p>\n<p><iframe loading=\"lazy\" width=\"450\" height=\"253\" src=\"https:\/\/www.youtube.com\/embed\/2qvTKLA9Hu4\" frameborder=\"0\" allowfullscreen><\/iframe><\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_2.jpg\" alt=\"waiting for the oil to boil\" \/><br \/>\nPic: Aunty Badriah Makling waited for the oil to boil<\/p>\n<p>Koling-Koling is usually served during festivals, wedding and banquets. It tastes better while it&#8217;s hot, so it is not so commonly sold even in Semporna. <strong>The key ingredients for recipe of Koling-Koling are 1 Kg of rice flour mixed with 4 eggs and a bit of coconut milk, sugar and flour<\/strong> (too much flour will make it bloats like a donut). Stir the mixture until it becomes gooey batter.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_3.jpg\" alt=\"get ready for making Koling-Koling\" \/><br \/>\nPic: oil is hot now, getting ready to cook.<\/p>\n<p>Preparing the batter may be easy to you, the challenging part is the technique to create the right shape of Koling-Koling with bare hand, which requires some practices to perfect. Let&#8217;s see how she does it.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_4.jpg\" alt=\"grabbing the material\" \/><br \/>\n<img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_5.jpg\" alt=\"pull it\" \/><br \/>\n<img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_6.jpg\" alt=\"pull it higher\" \/><br \/>\nFirst she grasped and pulled a portion of the sticky batter to the air.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_7.jpg\" alt=\"making Koling-Koling\" \/><br \/>\n<img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_8.jpg\" alt=\"shaking Koling-Koling to ball\" \/><br \/>\nThen she quickly grabbed a half-handful of batter from the air and shaked it swiftly to turn it into a small ball in her palm. She was smiling in the photos because I said she was too fast and I had to keep retaking the shots.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_9.jpg\" alt=\"dropping flour into the hot oil\" \/><br \/>\n<img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_10.jpg\" alt=\"making Koling-Koling\" \/><br \/>\n<img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_11.jpg\" alt=\"cooking Koling-Koling\" \/><br \/>\nNext she held her fingers together with a small opening at the tip (like snake head) and positioned her hand over the hot oil. When the batter flowed out, she moved her hand as if she was drawing a horseshoe on the oil. It&#8217;s harder than it seems. Beginners will get batter flowing out all over between the gaps of their fingers and unable to make the right shape.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_12.jpg\" alt=\"frying Koling-Koling\" \/><br \/>\n<img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_13.jpg\" alt=\"Koling-Koling in boiling oil\" \/><br \/>\n<img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_14.jpg\" alt=\"Koling-Koling almost done\" \/><br \/>\n<img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_15.jpg\" alt=\"serving Koling-Koling hot\" \/><br \/>\nThe last step is to deep-fry Koling-Koling front and back until it turns golden brown color. It takes about 20 seconds to make one Koling-Koling. The cooking process is really fun to watch.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_16.jpg\" alt=\"Koling-Koling, the food of Bajau people from Semporna\" \/><br \/>\n<img decoding=\"async\" src=\"http:\/\/www.mysabah.com\/images\/2015\/20150509_17.jpg\" alt=\"content of Koling-Koling\" \/><br \/>\nFour pieces of scrumptious Koling-Koling is only sold for RM1 (&#8776;US$0.30). The bread has a slightly chewy skin but soft inside. It&#8217;s sweet with bread-like texture, but finer and less airy.
